  • 1 large Onions
  • 3 stalk (small (5″ long) Celery)
  • 4 cloves (minced Garlic)
  • 1/4 tsp Ginger
  • 1 tsp Coriander leaf
  • 1 tsp Curry powder
  • 100 grams Jalapeno
  • 1 tsp Turmeric
  • 100 grams Chickpeas
  • 1 medium Tomatoes
  • 15 oz Coconut milk
  • 2 cup Quinoa
  1. Directions are based on the original recipe of 36 servings
  2. Step 1
  3. 1. in a large saucepan add chopped onion, celery and jalapeno. saute for 10 to 15 minutes . add all spices and garlic. cook for 3 to 5 more minutes ,
  4. 2. add chick peas , coat with all spices ,
  5. 3. add crushed tomatoes and coconut milk … cook for about 30 to 45 minutes to let flavors blend together.
  6. 4. serve on top of cooked quinoa or brown rice .
  7. 5. can also add jbf guac , hummus, or salsa
  8. 6. garnish with cilantro , and raw onions
