JBF Chana Marsala
- 1 large Onions
- 3 stalk (small (5″ long) Celery)
- 4 cloves (minced Garlic)
- 1/4 tsp Ginger
- 1 tsp Coriander leaf
- 1 tsp Curry powder
- 100 grams Jalapeno
- 1 tsp Turmeric
- 100 grams Chickpeas
- 1 medium Tomatoes
- 15 oz Coconut milk
- 2 cup Quinoa
- Directions are based on the original recipe of 36 servings
- Step 1
- 1. in a large saucepan add chopped onion, celery and jalapeno. saute for 10 to 15 minutes . add all spices and garlic. cook for 3 to 5 more minutes ,
- 2. add chick peas , coat with all spices ,
- 3. add crushed tomatoes and coconut milk … cook for about 30 to 45 minutes to let flavors blend together.
- 4. serve on top of cooked quinoa or brown rice .
- 5. can also add jbf guac , hummus, or salsa
- 6. garnish with cilantro , and raw onions
