JBF Chickpea Quinoa Salad
- 1 cup Quinoa
- 1 cup Arugula
- 1/2 cup chopped Red Onion
- 15 oz Chickpeas
- 1 1/2 medium (approx 2-3/4″ long, 2-1/2″ dia Green bell pepper)
- 1/2 tbsp Olive oil
- 1/2 tbsp Pepper
- Directions are based on the original recipe of 4 servings

- Cook quinoa according to package directions; cool. Toss together quinoa and
- remaining ingredients.
- Step 2
- Toss together quinoa and remaining ingredients. Pepper to taste.
