JBF Chickpea Salad
- 2 cup Chickpeas
- 2 medium whole (2-3/5″ dia Tomatoes)
- 1 cup chopped Red Onion
- 1/2 cucumber (8-1/4″ Cucumber)
- 1/4 cup Olives
- 1 tbsp Olive oil
- 1 tbsp Lemon juice
- 1 leaf (whole Spearmint)
- 1 tbsp Fresh cilantro
- 1 tsp Pepper
- Directions are based on the original recipe of 2 servings
- Step 1
- Drain chickpeas. Chop tomatoes, onion, and cucumber. Slice olives.
- Step 2
- Toss all ingredients together in a bowl and mix well.
- Step 3
- Serve immediately or chill until ready.
