JBF Cold Mediterranean Quinoa Salad
- 1/2 cup Quinoa
- 1 tbsp Walnut oil
- 2 tbsp Olives
- 1/2 large (8-1/4″ long Cucumber)
- 1/2 medium whole (2-3/5″ dia Tomatoes)
- 1 tbsp Lemon juice
- 2 tbsp Parsley
- 1 tbsp Spearmint
- 1/8 tsp Sea Salt
- Directions are based on the original recipe of 1 serving
- Step 1
- Prepare quinoa as per package directions; let cool completely.
- Step 2
- Dice all the vegetables.
- Step 3
- Drizzle the walnut oil over the quinoa, then add olives, cucumber, tomatoes, parsley, and mint.
- Step 4
- Squeeze 1/2 lemon over it and toss well. Taste for salt and adjust as needed, add more lemon juice if needed.
