JBF Goat cheese, Quinoa, Mushrooms & spinach
- 100 grams Quinoa
- 2 cup diced Mushrooms
- 4 cup Spinach
- 1 dash Salt
- 1 dash Pepper
- 1/2 cup Goat cheese
- 200 grams Pesto
- 2 cloves (minced Garlic)
- Directions are based on the original recipe of 4 servings
- Step 1
- 1, rinse and drain quinoa and cook in stock pan with water or chicken broth , while this is cooking
- 2. chop mushrooms and add to pan with salt pepper, and garlic,,, sauté for 5 to 10 minutes until mushrooms are softened .
- 3. add 1 cup o f spinach at a time until it is wilted down and all incorporated
- 4. once it is all cooked down add pesto and goat cheese …… when all together add quinoa into pan and mix together
- 5. serve warm
