JBF Goat cheese, Quinoa, Mushrooms & spinach

  • 100 grams Quinoa
  • 2 cup diced Mushrooms
  • 4 cup Spinach
  • 1 dash Salt
  • 1 dash Pepper
  • 1/2 cup Goat cheese
  • 200 grams Pesto
  • 2 cloves (minced Garlic)
  1. Directions are based on the original recipe of 4 servings
  2. Step 1
  3. 1, rinse and drain quinoa and cook in stock pan with water or chicken broth , while this is cooking
  4. 2. chop mushrooms and add to pan with salt pepper, and garlic,,, sauté for 5 to 10 minutes until mushrooms are softened .
  5. 3. add 1 cup o f spinach at a time until it is wilted down and all incorporated
  6. 4. once it is all cooked down add pesto and goat cheese …… when all together add quinoa into pan and mix together
  7. 5. serve warm
