JBF Healthy slow cooker Chicken Chili

  • 1 1/2 lb Chicken breast
  • 1 medium (2-1/2″ dia Onions)
  • 1 medium (approx 2-3/4″ long, 2-1/2 dia. Red bell pepper)
  • 100 grams Jalapeno
  • 6 cloves (minced Garlic)
  • 1 1/2 tsp (ground Cumin)
  • 1 tsp (ground Oregano)
  • 2 tsp Chili powder
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 3 cup Chicken broth
  • 14 oz Coconut milk
  • 1 fruit (2″ dia Limes)
  • 1/2 cup Cilantro
  1. Directions are based on the original recipe of 5 servings
  2. Step 1
  3. 1. add onion, peppers, garlic and spices to the bottom of a slow cooker… arrange chicken on top of vegetables in a single layer.
  4. 2. add broth and place lid on slow cooker
  5. 3. set heat to low and cook 7 to 8 hours or until chicken is done and veggies are tender.
  6. 4. remove chicken from slow cooker and shred with forks. return chicken to slow cooker.
  7. 5. turn heat to high . add coconut milk, stir and replace lid. continue heating an additional 15 min or until soup is heated through.
  8. 6. mix in lime juice and cilantro . taste and adjust seasonings as desired. serve in a bowl with chopped cilantro, avacado and lime wedges
