JBF Mediterranean Quinoa Bowl

  • 3/4 cup Quinoa
  • 2/3 cup Spinach
  • 1 3/4 oz Creamy Soft French-Style Treenut Cheese Made From Fine Cashew Nuts
  • 1/3 cup Olives
  • 1/4 medium (2-1/2″ dia Onions)
  • 2 Tbsp Organic Hummus
  • 2 tbsp Organic Salsa – Medium
  • 1/2 cup slices Cucumber
  • 1 tsp Lemon juice
  • 1 dash Pepper
  • 1/8 tsp Sea Salt
  1. Directions are based on the original recipe of 2 servings

  3. Cook quinoa according to package directions.
  4. Step 2
  5. While quinoa is cooking, chop the other ingredients.
  6. Step 3
  7. Once quinoa is finished, place all ingredients in a bowl. Top with lemon juice, sea salt, and pepper.
