JBF Mediterranean Quinoa Bowl
- 3/4 cup Quinoa
- 2/3 cup Spinach
- 1 3/4 oz Creamy Soft French-Style Treenut Cheese Made From Fine Cashew Nuts
- 1/3 cup Olives
- 1/4 medium (2-1/2″ dia Onions)
- 2 Tbsp Organic Hummus
- 2 tbsp Organic Salsa – Medium
- 1/2 cup slices Cucumber
- 1 tsp Lemon juice
- 1 dash Pepper
- 1/8 tsp Sea Salt
- Directions are based on the original recipe of 2 servings
- Step 1
- Cook quinoa according to package directions.
- Step 2
- While quinoa is cooking, chop the other ingredients.
- Step 3
- Once quinoa is finished, place all ingredients in a bowl. Top with lemon juice, sea salt, and pepper.
