JBF red lentil and black bean chilli
- 1 tbsp Coconut oil
- 1 small raw Red Onion
- 2 tablespoon Minced Garlic
- 1 tbsp (ground Cumin)
- 1 tbsp Chili powder
- 14 1/2 oz Organic Diced Tomatoes
- 1 tbsp Chiles Chipotles Adobados
- 3 can Canned black beans
- 3 3/4 cup Tomato sauce
- 3 cup Swanson Broth (Certified Organic Vegetable Broth)
- 8 oz Red Split Lentils
- 3/4 tsp Sea Salt
- 1 tsp Pepper
- 1 fruit (2″ dia Limes)
- Directions are based on the original recipe of 4 servings
- Step 1
- 1. Heat olive oil in a large pot over medium heat. Add onion along with a large pinch of salt and pepper. Cook 4-5 minutes, stirring
- 2. Add garlic, chili powder, cumin, and sugar and cook for another minute, stirring Frequently
- 3. Stir in tomatoes, chipotles in adobo, black beans, lentils, and a large pinch of salt and pepper.
- 4. Then add tomato sauce and 2 cups vegetable broth.
- 5.Cover, turn heat to medium-high and bring to a simmer.
- 6. Reduce heat and simmer over medium-low for 5-7 minutes or until lentils are tender, stirring frequently. Add remaining cup of broth if desired.
- 7. Stir in the juice of 1 lime and season to taste with salt and pepper.
