JBF red lentil and black bean chilli

  • 1 tbsp Coconut oil
  • 1 small raw Red Onion
  • 2 tablespoon Minced Garlic
  • 1 tbsp (ground Cumin)
  • 1 tbsp Chili powder
  • 14 1/2 oz Organic Diced Tomatoes
  • 1 tbsp Chiles Chipotles Adobados
  • 3 can Canned black beans
  • 3 3/4 cup Tomato sauce
  • 3 cup Swanson Broth (Certified Organic Vegetable Broth)
  • 8 oz Red Split Lentils
  • 3/4 tsp Sea Salt
  • 1 tsp Pepper
  • 1 fruit (2″ dia Limes)
  1. Directions are based on the original recipe of 4 servings

  3. 1. Heat olive oil in a large pot over medium heat. Add onion along with a large pinch of salt and pepper. Cook 4-5 minutes, stirring
  4. 2. Add garlic, chili powder, cumin, and sugar and cook for another minute, stirring Frequently
  5. 3. Stir in tomatoes, chipotles in adobo, black beans, lentils, and a large pinch of salt and pepper.
  6. 4. Then add tomato sauce and 2 cups vegetable broth.
  7. 5.Cover, turn heat to medium-high and bring to a simmer.
  8. 6. Reduce heat and simmer over medium-low for 5-7 minutes or until lentils are tender, stirring frequently. Add remaining cup of broth if desired.
  9. 7. Stir in the juice of 1 lime and season to taste with salt and pepper.
