JBF Roast Pumpkin Frittata

  • 1 1/3 cup 1″ cubes Pumpkin
  • 1/2 tsp Cinnamon
  • 1 tbsp Crushed red pepper flakes
  • 1/2 tbsp Olive oil
  • 3 tsp Coconut oil
  • 1/2 cup chopped Red Onion
  • 1 tsp Turmeric
  • 1 tsp Paprika
  • 2 extra large Egg
  1. Directions are based on the original recipe of 1 serving
  2. Step 1
  3. Preheat oven to 450 degrees F.
  4. Step 2
  5. Dice pumpkin into small cubes, mix with cinnamon, crushed red peppers, and olive oil. Spread onto a sheet pan and roast in the oven for about 30 minutes or until tender.
  6. Step 3
  7. Grease pan with coconut oil, saute diced onion until it starts to become see-through, add turmeric and paprika and fry for another 30 seconds to become fragrant.
  8. Step 4
  9. Add pre-roasted pumpkin, spreading in an even layer. Crack in 2 eggs, and top with feta cheese and fry until eggs are set.

  11. Serve and enjoy!
