JBF Roast Pumpkin Frittata
- 1 1/3 cup 1″ cubes Pumpkin
- 1/2 tsp Cinnamon
- 1 tbsp Crushed red pepper flakes
- 1/2 tbsp Olive oil
- 3 tsp Coconut oil
- 1/2 cup chopped Red Onion
- 1 tsp Turmeric
- 1 tsp Paprika
- 2 extra large Egg
- Directions are based on the original recipe of 1 serving
- Step 1
- Preheat oven to 450 degrees F.
- Step 2
- Dice pumpkin into small cubes, mix with cinnamon, crushed red peppers, and olive oil. Spread onto a sheet pan and roast in the oven for about 30 minutes or until tender.
- Step 3
- Grease pan with coconut oil, saute diced onion until it starts to become see-through, add turmeric and paprika and fry for another 30 seconds to become fragrant.
- Step 4
- Add pre-roasted pumpkin, spreading in an even layer. Crack in 2 eggs, and top with feta cheese and fry until eggs are set.

- Serve and enjoy!
