JBF Taco Salad (meatless)
- 1 3/4 cup Kidney beans
- 1 3/4 cup Black beans
- 100 grams Pinto beans
- 100 grams Seasoning mix (dry, taco, original)
- 1 cup (chopped Onions)
- 1 cup (chopped Green bell pepper)
- 1 serving Jalapeno
- 30 G Chips (Plantain)
- 1 tbsp Coconut Oil
- Directions are based on the original recipe of 16 servings
- Step 1
- 1, chop onion, pepper and jalapeno. add to a sauté pan with coconut oil. cook 5 to 6 minutes just until veggies have softened.
- 2. open all cans of beans drain and rinse , add to veggies,
- 3. add taco seasoning and cook for 5 to 7 minutes
- 4. take plantain chips and crumble in a bowl , add bean mixture and top with cheese (we use almond cheese)
- 5. eat with jbf guac and whatever salsa you enjoy
