JBF Taco Salad (meatless)

  • 1 3/4 cup Kidney beans
  • 1 3/4 cup Black beans
  • 100 grams Pinto beans
  • 100 grams Seasoning mix (dry, taco, original)
  • 1 cup (chopped Onions)
  • 1 cup (chopped Green bell pepper)
  • 1 serving Jalapeno
  • 30 G Chips (Plantain)
  • 1 tbsp Coconut Oil
  1. Directions are based on the original recipe of 16 servings
  2. Step 1
  3. 1, chop onion, pepper and jalapeno. add to a sauté pan with coconut oil. cook 5 to 6 minutes just until veggies have softened.
  4. 2. open all cans of beans drain and rinse , add to veggies,
  5. 3. add taco seasoning and cook for 5 to 7 minutes
  6. 4. take plantain chips and crumble in a bowl , add bean mixture and top with cheese (we use almond cheese)
  7. 5. eat with jbf guac and whatever salsa you enjoy
