JBF Vegan Coconut & Beetroot Balls

  • 1/2 cup Coconut meat
  • 1/2 cup Buckwheat groats
  • 1/4 beet (2″ dia Beets)
  • 1 date (pitted Dates)
  • 1/4 tsp Vanilla extract
  1. Directions are based on the original recipe of 4 servings
  2. Step 1
  3. Place coconut and buckwheat into a food processor fitted with the S blade and process into a fine flour.
  4. Step 2
  5. Add beetroot, pitted dates, vanilla extract and process until well combined.
  6. Step 3
  7. Wet hands a little bit with water and roll spoonful of the dough into little balls. Roll in shredded coconut and place them on a sheet of baking paper. For the best result, let sit them in the fridge overnight to firm. Transfer to an airtight container and store in the fridge. Enjoy!
